Besides, do you know your great-grandmother's first name?
Have you tried to locate the immigration / naturalization record? Or maybe you've tried the passenger list on ellisisland.org/ ?

Her first name was Katarzyna
I've tried to find naturalization records for both her and my great-grandfather, but no luck so far. She was already married when she immigrated to the US, so her surname was already Kowalski/Kowalska, and searching passenger lists turned up too many people, I can't be certain which one is her.
So I was hoping to find some information about her while she was still in Poland before she was married, since Kajdasz/Kajdosz isn't quite as common a surname as Kowalski, but without knowing exactly where in Poland she lived, that's probably a long shot.
